Huoshan Yellow Buds
Early buds from Mount Huo, yellowed under cloth. The grassy bite is traded for chestnut sweetness. Gentle enough to drink all afternoon.

Yellow tea is green tea with an extra step, men huang, where the warm leaf is wrapped and left to sit until it yellows gently and loses its grassy sharpness. Junshan Yinzhen is the most famous example, made only from buds grown on a small island in Dongting lake, and it has been an imperial and state tea for most of its history. The cup is pale yellow, sweet and rounded, tasting of fresh corn and cream with no astringency to speak of. Eighty degrees and three minutes in a tall glass, where the buds stand upright before sinking one by one.
