Junshan Silver Needle
Buds from Junshan island, smothered after firing so they yellow slowly. Delicate and sweet with a fresh-corn note. Almost none of the edge of a green tea.

Beigang sits on the Dongting lakeshore in Hunan, and the humidity there gives the leaf a softness that carries into the finished tea. The yellowing is brief, so more of the green freshness survives than in Junshan or Meng Ding: the aroma is grassy, the cup is pale, and the sweetness is clean rather than heavy. It is the most casual tea in the yellow category and priced accordingly. Eighty degrees and three minutes, and it takes a second steep without turning thin.
