Moonlight White is made from the large-leaf Yunnan variety used for Pu-erh, processed as a white tea and withered overnight rather than in the sun, which is where both the name and the two-tone leaf come from. That origin gives it a depth the Fujian whites do not have: apricot, cocoa and a resinous sweetness over a thicker mouthfeel. It sits somewhere between white tea and young Pu-erh, and it ages in a similar direction. Eighty-five degrees and three minutes, or a small pot and short steeps if you want to follow it as it changes.
Only unopened buds, each one covered in silver down. Exceptionally delicate, with melon and honey. The most prestigious white tea China makes.
One bud to two leaves, which gives it more body than Silver Needle. Clean and subtly sweet, with a little more depth. The sensible everyday white tea.
Picked late from larger leaf, the fullest of the Fujian whites. Hay and dried date, with real body behind them. Gentle enough to drink without watching the clock.
