Silver Needle Bai Hao Yinzhen

Moonlight White is made from the large-leaf Yunnan variety used for Pu-erh, processed as a white tea and withered overnight rather than in the sun, which is where both the name and the two-tone leaf come from. That origin gives it a depth the Fujian whites do not have: apricot, cocoa and a resinous sweetness over a thicker mouthfeel. It sits somewhere between white tea and young Pu-erh, and it ages in a similar direction. Eighty-five degrees and three minutes, or a small pot and short steeps if you want to follow it as it changes.
