Bai Mu Dan takes the bud along with the first two leaves, and that extra leaf is what fills out the cup. It keeps the clean, unforced sweetness white tea is loved for but adds hay, dried flowers and a faint apricot note that Silver Needle does not have. Because it costs a fraction as much, it is the white tea worth drinking daily rather than saving for occasions. Eighty-five degrees and four minutes, and it takes a second and third steep happily.
