Yunnan is where the tea plant started, and the large-leaf variety grown there produces buds thick enough to sort out on their own. Picked as buds only, the finished tea is gold rather than black, and the cup follows: honey and warm caramel with a soft sweetness and no malt. There is almost no astringency, so it holds up to a long steep and needs no milk. It rewards a slightly cooler pour than most blacks, around ninety degrees, which keeps the sweetness from turning dusty.
