Rooibos grows only in the Cederberg mountains north of Cape Town, and the red version is fermented in the sun after cutting, which develops both the colour and the sweetness. With no caffeine and no tannin it cannot turn bitter, so it will sit in the pot indefinitely and still taste of vanilla, nut and a little woodsmoke. That makes it the obvious choice for evenings and for children. Boil the water, give it five minutes or fifty, and add milk if you want it creamier.
